  • 1.5 cups - All-purpose Flour
  • 1.2 cups - Sugar
  • 1/2 cup - Butter (unsalted)
  • 1/2 cup - Almond (blanched)
  • 3 - eggs
  • 1/2 cup - Milk
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 1/2 tsp - Lemon/Orange peel
  • 1 pinch - Salt
  • 1/2 tsp - Vanilla extract
  • How to Make Almond Butter Cake:

    1. Finely powder the sugar in a mixer and add butter and mix them well.
    2. To this mixture add 2 whole eggs and 1 egg yolk, retain the egg white.
    3. Beat them well until it becomes fluffy but not dry.
    4. Add vanilla extract to this.
    5. Put flour, baking powder, baking soda, salt in a large bowl.
    6. Use a sieve to remove lumps of all the dry ingredients.
    7. To this, add lemon/orange peel.
    8. Mix them well.
    9. Add dry ingredients to wet mixture slowly alternating with milk.
    10. Finally add some coarsely ground almonds to this and blend them well.
    11. Grease a round cake pan with butter and some flour, pour the mixture onto it.
    12. Bake the cake in a 350 degrees C pre-heated oven for about an hour.
    13. Brush the cake with egg white after half an hour.
    14. Arrange whole almond pieces in a regular manner.
    15. Insert a thin knife or a tooth pick and it should come out clean indicating the cake is done.
