Ingredients

  • 1 lb - small Potato
  • 1/2 - green or Red Chilli
  • 1/2 cup - yogurt or 1/4 cup - yogurt and 1/2 Tomato
  • 1/4 cup - water
  • Salt to taste
  • Oil to fry masala
  • For spices:
  • 1/4 cup - ground Onion paste
  • 1/4 tsp each - haldi, chilli and dhaniya-jeera powder
  • 3 tbsp - finely chopped green coriander
  • 1 tsp - ground ginger-garlic paste
  • How to Make Aloo Dum:

    1. Boil potatoes and peel.
    2. Heat the oil. Fry the onion paste till brown.
    3. Add ginger-garlic paste and fry for another minute.
    4. Then, add yogurt or yogurt with tomato, salt to taste, haldi, mirchi and dhaniya-zeera powder.
    5. Fry till the oil separates from the masala.
    6. Add aloo and fry aloo in this masala in medium heat with a lid on for some more time (till you feel that aloo has all the masala coating).
    7. Add water if you want some gravy.
