Ingredients

  • Potatoes - 1/4 Kg
  • Onions - 2
  • Green chillies -3
  • Bay Leaf - 3 (optional)
  • Chilli powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Cashew nuts - 15
  • Coconut Milk (or) Milk - 1/2 cup
  • Salt
  • Oil
  • For grinding masala:
  • Ginger - 1/2 inch piece
  • Garlic - 4 Cloves
  • Cloves - 4
  • Cardamom - 2
  • Cinnamon - 1 stick
  • Cumin seeds - 1 tsp
  • Coriander seeds - 1 tsp
  • How to Make Aloo Khorma:

    1. Boil the potatoes.
    2. Peel and cut them to medium sized cubes.
    3. Heat oil and add cashews and bayleaf.
    4. Fry till light brown.
    5. Add onions, green chillies and turmeric and fry till golden brown.
    6. Add the ground masala paste, potatoes, chilli powder and salt. Mix well. Add a little water.
    7. Add coconut milk or milk, mix and cover the pan and continue to cook till the oil leaves the sides of the pan.
    8. Serve hot with plain rice or fried rice.
