Ingredients

  • Toor Dal - 1 cup
  • Tamarind - size of a Lime
  • Oil - 2 tbsp
  • Mustard - 1 tsp
  • Curry leaves - a few
  • Onion - 1 cup, chopped
  • Finely chopped amaranth - 2 cups
  • Sambar powder - 3 tbsp
  • How to Make Amaranthus Sambar:

    1. Cook dal with enough water till soft.
    2. Soak tamarind in 1 cup of water and extract the juice.
    3. Heat oil in a dekchi and add mustard.
    4. When it splutters, add curry leaves and onion.
    5. Fry till onion is light brown.
    6. Add the chopped greens and 1 tsp salt. Sprinkle a little water.
    7. Cover and cook till the greens are soft.
    8. Add the tamarind juice and simmer without covering for 5 minutes.
    9. Mix sambar powder with 1/2 a cup of water and add to the greens.
    10. Mash the cooked dal lightly and add.
    11. If the sambar is very thick, add some water.
    12. Bring to a boil and simmer for 2-3 minutes.
