How to Make Amaretti

  • Chop and pulverize almonds.
  • Mix thoroughly with half the sugar.
  • Beat egg whites until very stiff.
  • Add remaining sugar and beat again.
  • Add almond mixture.
  • Mix thoroughly.
  • Shape into balls of about 5 cm diameter.
  • Place in greased baking sheet about 2-5 cm away from each other.
  • Bake in a moderate oven till light brown.
