Ingredients

  • 1 kg. white pumpkin or bhopla
  • ¼ kg. Sugar
  • 1 tbsp. seeds of big Cardamoms
  • Silver foil or golden foil
  • A few drops yellow food colouring
  • ½ tsp. essence of kewda
  • ¼ cup paan ka chuna

How to Make Anguri Petha

  • Peel and cut the pumpkin into one inch cubes.
  • Pierce holes into each cube all over with the help of a sharp needle.
  • Dissolve chuna in a dekhi of boiling water, strain and put over the pumpkin cubes.
  • Set aside for 1 hour, then wash thoroughly over in 10 to 12 changes of fresh water.
  • Boil in clean water till half done.
  • Put 2 cups water in sugar and prepare a thin syrup, put in the vegetable cubes, colour and cardamoms and cook till the syrup strings thread.
  • Remove from fire, put in the essence, cool and cover each cube of vegetable with foil.
