Ingredients

  • For Base:
  • Maida - 1.5 cup
  • Butter - 1/2 cup
  • Powdered Sugar - 4 tbsp
  • Almond essence - 2-3 drops
  • For Topping:
  • Dried Apricots - 150 gm
  • Maida - 4.5 tbsp
  • Baking powder - 1/2 tsp
  • Salt - a pinch
  • Almond Essence - 2-3 drops
  • Brown sugar - 3/4 cup
  • eggs - 2
  • Lime rind - 1 tsp
  • Raisins - 2 tbsp
  • Chopped nuts - 2 tbsp
  • Vanilla essence - 1 tsp
  • How to Make Apricot Bars:

    1. Soak apricots overnight in just enough water to cover them completely.
    2. Preheat the oven to 170 degree C.
    3. Combine all the ingredients for the base. Press into a tray, (9"/12") greased and lined with butter paper.
    4. Bake for about 20 minutes or till the mixture is firm.
    5. Meanwhile, drain the apricots, remove the seeds and chop the fruits
    6. Mix the maida with baking powder and salt.
    7. Beat brown sugar and eggs together.
    8. Mix in apricots, maida, almonds, vanilla essence, nuts and raisins.
    9. Spread on the baked base and bake further for 25-30 minutes or till the topping is set.
    10. Cool and cut into bars.
