Ingredients

  • 1/2 kg - Aubergine
  • 2 - Drumsticks
  • 1 tbsp - oil
  • 1/2 tsp - Mustard Seeds
  • Handful of Curry leaves
  • 1/4 tsp - grated Coconut
  • 1/4 tsp - Turmeric powder
  • 1/4 tsp Fenugreek seeds
  • 4-6 - Red Chillies
  • 1 tsp - Coriander seeds
  • 1 tsp - Tamarind paste
  • How to Make Aubergine and Drumstick Curry:

    1. Cut brinjals into broad pieces.
    2. Cut drumsticks into 4 cms long pieces.
    3. Season mustard and curry leaves in oil and cook the drumstick pieces.
    4. Add brinjal pieces, salt and cook till they become tender.
    5. Grind coconut gratings, turmeric powder, chillies and tamarind together into a coarse paste.
    6. Add roasted fenugreek and coriander seeds and grind further to make a smooth mixture.
    7. Add this mixture to the cooked vegetables with some water. Mix well and bring to a boil.
    8. Simmer for 5 mins and serve hot with rice.
