Ingredients

  • 1/2 kg - aubergine
  • 2 - drumsticks
  • 1 tbsp - oil
  • 1/2 tsp - mustard seeds
  • Handful of curry leaves
  • 1/4 tsp - grated coconut
  • 1/4 tsp - turmeric powder
  • 1/4 tsp fenugreek seeds
  • 4-6 - red chillies
  • 1 tsp - coriander seeds
  • 1 tsp - tamarind paste

How to Make Aubergine and Drumstick Curry

  • Cut brinjals into broad pieces.
  • Cut drumsticks into 4 cms long pieces.
  • Season mustard and curry leaves in oil and cook the drumstick pieces.
  • Add brinjal pieces, salt and cook till they become tender.
  • Grind coconut gratings, turmeric powder, chillies and tamarind together into a coarse paste.
  • Add roasted fenugreek and coriander seeds and grind further to make a smooth mixture.
  • Add this mixture to the cooked vegetables with some water. Mix well and bring to a boil.
  • Simmer for 5 mins and serve hot with rice.
