Ingredients

  • 1 tbsp. sesame seeds
  • 2 avocados, peeled, pitted and chopped
  • Juice of 1 Lime
  • 1 red bell pepper, cored, seeded & chopped
  • 1 yellow bell pepper, cored, seeded and chopped
  • ½ cucumber, finely chopped
  • 2 carrots, peeled and chopped
  • 2 tomatoes, chopped
  • 4 scallions, sliced
  • 10 pitted right black olives, halved
  • 1 romaine lettuce, coarsely torn
  • ¼ cup salad dressing
  • 1 tbsp. chopped Mint

How to Make Avacado, Red Pepper and Olive Salad

  • Heat a non stick skillet over medium low heat.
  • Dry fry the sesame seeds for 2 minutes, stirring frequently, until golden brown and toasted. Set aside.
  • Meanwhile, place the avocados in a large bowl and toss with the lime juice to prevent discoloration.
  • Gently toss together with the remaining ingredients except the sesame seeds.
  • Sprinkle the salad with the toasted sesame seeds and serve.
