Ingredients

  • 1 - medium Avocado
  • For the filling:
  • 1 - avocado, peeled and grated
  • 1/2 tsp - green Mango paste
  • 2 tbsp - mayonnaise
  • 2 tbsp - grated Carrots
  • 2 tbsp - sweet mango, cut into small pieces
  • 1/2 tsp - Sugar powder
  • How to Make Avocado, Mango and Carrot Salad:

    1. In a mixing bowl mix together the grated avocado, mayonnaise, green mango paste, carrots and sugar powder and pieces of sweet mango. Keep aside.
    2. To serve:
    3. Cut the avocado (keep for serving) into halves and remove the seed.
    4. Discard the seed and use the prepared filling to fill the avocado. Chill in the fridge and serve.
