  • 1 - Brinjal
  • 2 tbsp - Olive oil
  • 2 tbsp - tahini (sesame seeds paste in Olive oil, available at health food stores)
  • 2 tsp - fresh Garlic paste
  • 2 tbsp - fresh Lemon juice
  • Salt and pepper for seasoning.

How to Make Baba Ghanous (Eggplant Dip)

  • Brush brinjal lightly with oil and roast on flame to give it a barbeque flavour.
  • Peel the skin off, chop and cook brinjal.
  • Add all the other ingredients including oil and quickly whip, in blender.
  • Season well with salt and pepper and chill in refrigerator.
  • Garnish with a pinch of red paprika or red chilli powder and mint sprig.
