  • Besan -1 cup
  • Rice flour - 1/2 cup
  • Chilli powder - 1/2 to 1 tsp
  • Asafoetida powder - 1/2 tsp
  • Cooking soda - a pinch
  • Fresh or canned Bamboo shoot slices and tips - 1 to 1.5 cup
  • Oil to deep fry
  • Salt to taste
  • How to Make Bamboo Shoot Fritters (Bajji):

    1. Mix besan, rice flour, chilli powder, asafoetida and cooking soda together.
    2. Add enough water and make a smooth batter of coating consistency.
    3. Heat oil for deep frying.
    4. Dip bamboo shoots pieces in batter and deep fry till golden brown.
    5. Drain well and serve.
