Ingredients

  • Raw Rice - 1/2 cup
  • Red gram (toor) dal - 1/2 cup
  • Dry Red Chillies - 3 to 4
  • Tamarind - 1.5 cm ball
  • Grated Coconut - 1/2 cup
  • Finely shredded Bamboo shoot - 1/2 cup
  • Minced Onion - 1/2 cup
  • Oil as needed
  • Salt to taste
  • How to Make Bamboo Shoot Spicy Pancakes:

    1. Wash and soak rice and dal together in water for 1 hour.
    2. Roast red chillies with 1/2 tsp oil.
    3. Drain the rice and dal of water.
    4. Add chillies, tamarind and coconut. Grind to a stiff, slightly coarse paste.
    5. Mix in the bamboo shoots, onion and salt.
    6. Heat a griddle or dosa pan. With a moist hand, pick up about 1/6 the paste and place on the pan.
    7. Flatten carefully with hand (take care to touch only the mixture and not the pan) to a round, about a cm thick.
    8. Pour a tsp of oil all around it and cook on moderate heat till the underside is golden brown.
    9. Turn over the pancake, pour some more oil and cook the other side. Use all the mixture thus.
    10. Serve.
