How to Make Bamboo Shoot Spicy Pancakes

  • Wash and soak rice and dal together in water for 1 hour.
  • Roast red chillies with 1/2 tsp oil.
  • Drain the rice and dal of water.
  • Add chillies, tamarind and coconut. Grind to a stiff, slightly coarse paste.
  • Mix in the bamboo shoots, onion and salt.
  • Heat a griddle or dosa pan. With a moist hand, pick up about 1/6 the paste and place on the pan.
  • Flatten carefully with hand (take care to touch only the mixture and not the pan) to a round, about a cm thick.
  • Pour a tsp of oil all around it and cook on moderate heat till the underside is golden brown.
  • Turn over the pancake, pour some more oil and cook the other side. Use all the mixture thus.
  • Serve.
