Ingredients

  • 6 - raw cooking Bananas
  • 2 tbsp - soaked puffed Rice (poha), drained
  • 1 tbsp - Mint leaves finely chopped
  • 1 tbsp - coriander leaves, finely chopped
  • 4 to 5 - green chillies, finely chopped
  • 1 inch - ginger, grated (optional)
  • 1/2 tsp - Mustard Seeds
  • 4 to 5 pinch - Asafoetida
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - Garam Masala
  • 1 tsp - Lemon juice
  • 2 tbsp - oil
  • To deep fry - oil
  • For batter:
  • 1.5 cups - gram flour
  • 1/4 tsp - Turmeric powder
  • 1 pinch - soda bicarb
  • 1 tbsp - hot oil
  • salt - to taste

How to Make Banana Bonda

  • Pressure cook bananas with skin, till soft.
  • Remove skin and mash while hot. Keep it aside.
  • Heat oil in a heavy pan.
  • Add mustard seeds and allow to splutter.
  • Add asafoetida, mint, coriander, chillies, ginger and lemon juice.
  • Stir, add mashed bananas, poha, salt, turmeric and garam masala. Mix well.
  • Keep the mixture aside, to cool.
  • For batter:
  • Mix flour, soda bicarb, salt and turmeric.
  • Add enough water, to make a batter, which will coat the back of a spoon thickly.
  • Add hot oil and mix well.
  • To proceed:
  • Heat oil in a frying pan.
  • Make ping pong ball, sized balls, from the mixture.
  • Dip in the batter and put in hot oil.
  • Fry on medium flame, till golden.
  • Drain, serve hot with green and tamarind chutneys, or sauce.
