Ingredients

  • 225 g - plain flour
  • 125 g - butter
  • 90 g - rolled oats
  • 175g - brown sugar
  • 75g - dates, chopped
  • 1 -egg yolk
  • 1 tsp -vanilla essence
  • 1/2 tsp -bicarbonate of soda
  • 1 - mashed banana
  • 1 tsp - finely grated lemon rind
  • For the topping: 4 - seedless dates chopped
  • 60 g - rolled oats

How to Make Banana, date and rolled oats cookie

  • Preheat the oven to 180 degree Celsius.
  • Grease and line a baking tray with baking paper.
  • Beat butter, rind, essence, egg yolk and sugar with an electric mixer or using a wooden spatula until it gets properly mixed.
  • Stir in mashed banana, then sift the flour and soda, add oats dates and mix them together.
  • The mixture will be quite sticky.
  • Roll level teaspoon of the mixture into a ball.
  • Roll each ball in the oats, flatten it slightly, place it on an oven tray leaving 5 cm gap between each cookie.
  • Press a piece of chopped dates on top of each cookie.
  • Bake it in the preheated oven for 15 minutes.
  • Cool it on a tray.
  • The cookies can be stored in a air tight container for up to 3 weeks.
