Ingredients

  • 2 tbsp - Unsalted butter
  • 2 cups - Bananas, peeled and cut into 2 cm slices
  • 385 ml - Evaporated milk
  • 1/4 cup - Dark brown sugar
  • 2 - Lightly whipped eggs
  • 1 tsp - Cornflour
  • 1 tsp - Vanilla essence
  • 1/2 tsp - Cardamom powder
  • For the garnish:
  • 1/2 cup - Blanched, flaked and roasted Almonds
  • For Orange sauce:
  • 1 cup - Fresh orange juice
  • 2 tbsp - Sugar
  • 2 tsp - Cornflour
  • 1 tsp - Unsalted butter

How to Make Banana Pudding with Orange Sauce

  • Preheat oven to 190 degrees C.
  • Melt butter in a heavy frying pan. Add bananas.
  • Cook on low heat till bananas are soft.
  • Transfer to 1.6 litre casserole dish. Keep aside.
  • Combine evaporated milk and brown sugar.
  • Bring to boil.
  • Simmer on low heat for 3 mins stirring continuously.  Cool completely.
  • Add milk mixture to whipped eggs, whipping continuously.
  • Add cornflour, vanilla essence and cardamom powder, whipping continuously. Pour mixture over the banana layer.
  • Place casserole in a shallow pan. Pout hot water outside the casserole dish, to 1 inch level.
  • Bake, uncovered, for 35 mins. Chill. 
  • Garnish. Serve with orange sauce. 
  • For Orange sauce: Combine all the ingredients in a small sauce pan. Simmer on low heat, stirring continuously till sauce thickens. Chill.
