Ingredients

  • Karela - 1 (large) piece
  • Drumsticks - 3 long pieces
  • Parval - 4
  • Potato - 1 (large)piece
  • French beans - 1/2 cup, chopped
  • Brinjal - 1 (small) piece
  • Raw banana (optional) - 1 piece
  • Sesame seeds- 1 tsp
  • Mustard seeds - 1/2 tsp
  • Dry mirchi - 2
  • Sugar - 1 tsp
  • Milk - 2 tsp
  • Paanch phoran - 1/2 tsp
  • Ghee - 2 tsp
  • Paste of mustard seeds powder - 1 tbsp
  • Salt to taste.

How to Make Bengali style Sukto

  • Chop all the vegetables, except karela, into medium pieces. Cut the karela into rings.
  • Heat 2-3 tbsp oil in a pan and deep-fry the karela pieces. Keep aside.
  • Now, heat some more oil in the pan and splutter the panch phoran, mustard seeds, dry mirch.
  • Add all the vegetables, except the fried karela, and saute for 5-7 mins.
  • Add salt and sugar and pour enough water to cover the vegetables.
  • Cover the pan and cook until tender.
  • Add the fried karela pieces, milk and mustard seeds paste.
  • Let it cook for 2-3 mins and add ghee.
  • Stir well and serve hot with rice.
