  • 2 - shallots, chopped
  • 1 tbsp - Cream
  • 1/4 pound - Butter
  • 1 cup - white wine
  • white pepper to taste
  • cayenne pepper to taste
  • salt to taste

  • Sweat shallots in butter.
  • Add white wine, a pinch each of salt, white pepper and cayenne pepper and reduce.
