How to Make Bhagara Baingan with Coconut and Sesame Seeds

  • Slit brinjals till 3/4 length so that the stalk remains intact. Deep fry in oil and keep aside.
  • Roast peanuts, sesame seeds lightly and grind with red chillies and coconut into a paste.
  • In a pan, heat oil. Add mustard seeds, cumin seeds, urad dal and curry leaves.
  • After mustard seeds splutter, add onions.
  • Once onions turn golden brown, add peanut paste, green chillies, turmeric powder and salt. Cook for 2-3 minutes.
  • Then, add tamarind paste and water. Once the water starts to boil, add brinjals and let it simmer till the gravy thickens.
  • Garnish with coriander leaves.
