Ingredients

  • 300 g - lady's finger
  • 2 - onions, thinly sliced into rings
  • 2 - green chillies, finely chopped
  • 1 tbsp - coriander leaves, finely chopped
  • 1 inch - ginger, grated
  • 2-3 - flakes garlic, peeled, crushed
  • 1/2 - Lemon juice, extracted
  • 1 pinch - Asafoetida
  • 2-3 - pinches Turmeric
  • salt to taste
  • 2 tbsp- oil
  • How to Make Bhindi Pyaz:

    1. Slit lady's finger half lengthwise. If too long cut into 3-inch long pieces.
    2. Heat 1 tbsp oil in a non-stick pan.
    3. Add lady's finger and stir fry till it is crisp.
    4. If overdone, it will turn blackish. If underdone, it will be sticky.
    5. Remove from pan and keep aside till required.
    6. Heat remaining oil in same pan and stir fry onions till golden brown.
    7. Keep aside in a pan till required.
    8. Just before serving, heat onions in pan.
    9. Add all other seasonings and stir fry for a few seconds.
    10. Add lady's finger, salt and stir and pour into a serving dish.
    11. Garnish with chopped coriander.
    12. Serve hot and crisp with roti, rice or parathas.
