Ingredients

  • Bitter gourd - 300 to 350 gm
  • grated Coconut - 3 tbsp
  • green chilies 2, chopped
  • Jaggery powder - 1 tbsp
  • Lime juice - 1 tbsp
  • Onion - ½ cup, finely chopped
  • oil to deep fry
  • salt - ¾ tsp

How to Make Bitter Gourd Kosumbari

  • Scrape the bitter gourds and chop into small pieces.
  • Mix with salt and keep aside for 30 minutes.
  • Squeeze out the bitter juice.
  • Heat oil and deep fry the gourd pieces on mode flame till brown and crisp.
  • Crush coconut with chilies and jaggery.
  • Just before serving, add the coconut mixture and lime juice to the fried pieces.
  • Taste and add salt if needed.
  • Serve as an accompaniment to a traditional South Indian meal.
