Ingredients

  • Bitter gourd - 1/2 kg
  • Besan (chickpeas flour) - 1 tbsp
  • Turmeric - 1/2 tsp
  • Chilli powder - 1.5 tsp
  • Garlic - 8 flakes, crushed
  • Dry Coconut (kopra) - 4 tbsp, grated
  • Onion - 1.5 cups, chopped finely
  • Oil - 3 tbsp
  • Jaggery powder - 1 tbsp
  • Tamarind - size of a big Lime
  • Salt to taste
  • How to Make Bitter Gourd Saute:

    1. Scrape the bitter gourd. Slit and discard the seeds. Chop the flesh into small pieces. Mix them with turmeric and salt.
    2. Soak tamarind in 1 cup of water and extract the juice.
    3. Soak bitter gourd pieces in this for 30 minutes.
    4. Drain and rinse well with water.
    5. Squeeze out all the water.
    6. Heat oil and fry bitter gourd pieces till brown.
    7. Drain and reserve.
    8. Add onion to the remaining oil in the pan.
    9. Fry till light brown.
    10. Add the bitter gourd pieces, garlic, chilli powder and coconut.
    11. Stir fry till fragrant.
    12. Sprinkle the besan over it and fry for 1 more minute.
    13. Add jaggery and salt if needed.
    14. Leave covered on low flame for 2 minutes.
    15. Serve hot with roti or chapatti.
