How to Make Bitter Gourd Saute

  • Scrape the bitter gourd. Slit and discard the seeds. Chop the flesh into small pieces. Mix them with turmeric and salt.
  • Soak tamarind in 1 cup of water and extract the juice.
  • Soak bitter gourd pieces in this for 30 minutes.
  • Drain and rinse well with water.
  • Squeeze out all the water.
  • Heat oil and fry bitter gourd pieces till brown.
  • Drain and reserve.
  • Add onion to the remaining oil in the pan.
  • Fry till light brown.
  • Add the bitter gourd pieces, garlic, chilli powder and coconut.
  • Stir fry till fragrant.
  • Sprinkle the besan over it and fry for 1 more minute.
  • Add jaggery and salt if needed.
  • Leave covered on low flame for 2 minutes.
  • Serve hot with roti or chapatti.
