Ingredients

  • FOR SALSA :
  • 2 large Tomatoes
  • diced 1 Capsicum or jalapeno pepper
  • seeded and minced 1/2 sweet Onion
  • minced 2 fresh limes for juice or Vinegar
  • 3/4 cup - fresh Coriander leaves chopped
  • 2 - Garlic Cloves
  • minced 1 tsp - cumin salt to taste
  • FOR BURRITO :
  • 2 -3 whole Wheat flour tortillas
  • 1 can - black beans
  • 1/2 cup - grated cheddar cheese
  • How to Make Black bean burritto:

    1. Preparation for salsa-
    2. Mix all ingredients together.
    3. Add salt and ground pepper to taste. Add cumin. Set aside or place in fridge.
    4. Preparation for burrito-
    5. Heat beans in a pan.
    6. Heat tortilla in a separate tawa (no oil, low heat), flipping it every 10 seconds until it's warm on both sides.
    7. Place the cheese on the tortilla and once it melts, transfer the tortilla to a plate.
    8. Add beans and salsa to the middle of the tortilla.
    9. Fold the ends of the tortilla toward the middle and then roll it up.
