How to Make Brinjal Sabji

  • Cut the brinjals into circular/semi-circular slices
  • Keep them in water to retain its colour.
  • Fry the chopped onion with 3 - 4 tsps of oil
  • Fry till onion is slightly pink in colour
  • Add chopped tomatoes to it and fry them too
  • Add salt, turmeric powder, spices, ginger paste and garlic powder to it
  • Stir it properly
  • Keep this paste separately
  • Heat the pan and add 3 - 4 tsps of oil
  • Add the chopped brinjal slices, and fry them till they are properly cooked
  • Add the prepared paste of tomato and onion to the fried brinjal
  • Stir it well
  • Add sugar as per the taste
  • Stir it well till the vegetable is cooked
  • Add coriander leaves and serve.
