Ingredients

  • 200 g - broccoli, chopped finely
  • 2 tbsp - butter/oil
  • 2 tbsp - sifted flour
  • 1/4 tsp - powdered black pepper
  • 3/4 cup - Milk
  • 4 cups - stock or water
  • 1/2 tsp - Celery salt
  • 2 tsp - salt
  • Cream for garnishing

How to Make Broccoli Soup with Cream

  • Heat butter or oil in a heavy saucepan. When the butter melts or the oil is steaming, add half the broccoli.
  • Turn around a few times, lower the heat and continue sauteeing for about half a minute.
  • Add the flour and turn it around until the mixture leaves the sides of the pan.
  • Remove from heat and add the stock gradually, stirring all the time to avoid lumps.
  • When the mixture cools, blend in a blender.
  • Place the pan back on heat and add the remaining broccoli, milk, black pepper and celery salt.
  • Cook over high heat, stirring a few times, until it comes to boil. Then simmer over low heat for at least 10 minutes.
  • Serve hot garnished with cream.
