  • 1 cup - brown Rice
  • 3 cups - low fat Milk
  • 2 cups - water
  • 1/2 tsp - Nutmeg powder
  • 1/2 tsp - Cardamom powder
  • A generous pinch of Saffron
  • Sugar to taste
  • A couple of sliced and toasted Almonds and Pistachio nuts
  • How to Make Brown rice pudding:

    1. Soak the rice for 30 mins to 1 hour.
    2. Heat the water in a saucepan and add the rice. Bring it to a boil.
    3. After 10 to 15 mins add the milk, bring down the heat, cover partially and cook for another 10 to 15 mins.
    4. Take care to stir on and off, so that it does not stick to the bottom.
    5. Add the sugar, saffron, spices and give it a stir.
    6. Cook for another 10 mins until the rice is tender.
    7. Garnish with toasted sliced almonds and pistachios.
