  • 1 cup - brown rice
  • 3 cups - low fat milk
  • 2 cups - water
  • 1/2 tsp - nutmeg powder
  • 1/2 tsp - cardamom powder
  • A generous pinch of saffron
  • Sugar to taste
  • A couple of sliced and toasted almonds and pistachio nuts

How to Make Brown rice pudding

  • Soak the rice for 30 mins to 1 hour.
  • Heat the water in a saucepan and add the rice. Bring it to a boil.
  • After 10 to 15 mins add the milk, bring down the heat, cover partially and cook for another 10 to 15 mins.
  • Take care to stir on and off, so that it does not stick to the bottom.
  • Add the sugar, saffron, spices and give it a stir.
  • Cook for another 10 mins until the rice is tender.
  • Garnish with toasted sliced almonds and pistachios.
