Ingredients

  • 3 cups - canned Butter beans
  • 1 - large onion, chopped
  • 1 - carrot, chopped finely
  • 1 to 2 - Garlic cloves, minced
  • About 1/2 tsp - dried Oregano and Thyme
  • 2 - large Tomatoes
  • 1 tbsp - Tomato paste
  • A pinch of Sugar
  • Salt to taste
  • A few sprigs of Cilantro to garnish
  • How to Make Butter beans with tomato:

    1. In a skillet add about 1 tsp oil and saute the onions and garlic with salt.
    2. When slightly soft, add the carrots.
    3. Add the tomatoes, the dried herbs and the tomato paste.
    4. Add about 1/2 to 3/4 cups water and cook it on high heat.
    5. When most of the water has been absorbed, add the beans.
    6. Add the sugar.
    7. Add the cilantro and give it a toss with the tomato mixture.
    8. Serve hot.
