  • 6 - medium-sized Capsicums
  • 2 tbsp - oil
  • 2 - potatoes, boiled and mashed
  • 1 - onion, chopped
  • 1 - tomato, chopped
  • 1 tsp - garlic, chopped
  • 1 tsp - chilli powder
  • 1/2 tsp - Turmeric powder
  • 1 tsp - cumin powder
  • salt to taste
  • How to Make Capsicums Stuffed With Potatoes:

    1. Heat oil in a pan and saute the onions and garlic for a few minutes.
    2. Add the tomatoes, cumin powder, chilli powder, turmeric powder and salt and cook for a few minutes.
    3. Mix in the boiled and smashed potatoes.
    4. Cook for 3 more minutes, then remove the mixture from the heat.
    5. Cut the tops of the capsicums and remove the seeds.
    6. Fill in the potato mixture in the capsicums. Smear oil over the capsicums.
    7. Heat oil in a pan and gently pan-fry the capsicums until the skin changes colour.
    8. Sprinkle some grated cheese on top and serve with grilled tomatoes.
