How to Make Carrot and Tomato Shorba

  • Melt butter in a pan.
  • Add cumin, coriander, pepper and cinnamon.
  • Fry till fragrant.
  • Add onion and garlic and fry till onion is light brown.
  • Add tomato and water or stock.
  • Simmer till tomato is very soft, about 20 minutes.
  • Cool and blend in a mixer and strain.
  • Add carrot and salt to the liquid and simmer for 5 minutes.
  • Remove from fire, stir in the lime juice.
  • Serve hot garnished with coriander leaves.
