Ingredients

  • 2 cups - fresh carrots
  • 1 cup - grated coconut
  • 3 sprigs - coriander
  • 1 tsp - lime juice
  • Salt to taste
  • For Seasoning:
  • 1 tsp - mustard seeds
  • 1 - green chilli
  • a pinch - asafoetida
  • 4 - curry leaves
  • 2 tsp - oil

How to Make Carrot Kosambari

  • Mix all the ingredients in a mixing bowl.
  • Heat oil in a pan, splutter mustard and add green chillies, asafoetida and curry leaves.
  • Add the seasoning to the other ingredients and mix well.
  • Garnish with chopped coriander and serve.
