Ingredients

  • 2 cups - fresh Carrots
  • 1 cup - grated Coconut
  • 3 sprigs - coriander
  • 1 tsp - Lime juice
  • Salt to taste
  • For Seasoning:
  • 1 tsp - Mustard Seeds
  • 1 - Green chilli
  • a pinch - Asafoetida
  • 4 - Curry leaves
  • 2 tsp - oil
  • How to Make Carrot Kosambari:

    1. Mix all the ingredients in a mixing bowl.
    2. Heat oil in a pan, splutter mustard and add green chillies, asafoetida and curry leaves.
    3. Add the seasoning to the other ingredients and mix well.
    4. Garnish with chopped coriander and serve.
