Ingredients

  • 1 cup - cooked Chickpeas
  • 1 to 2 bunches - spinach, coarsely chopped
  • 1 - red onion, chopped
  • 2 to 3 - medium tomatoes, chopped
  • 1/2 tsp - Cumin seeds
  • 1/2 tsp - Fennel seeds
  • 1 stick - Cinnamon
  • 2 - Bay Leaves
  • A pinch of Clove powder and Cardamom powder
  • 1 tsp - Garam Masala
  • 1 tsp - Mango powder
  • 1/2 tsp - Turmeric powder
  • 1 tsp - cumin and coriander powder
  • 1/2 tsp - Ginger Garlic paste
  • 1 to 2 - green chillies, thinly sliced
  • Salt to taste
  • How to Make Channa Palak (Chickpeas with Spinach):

    1. In a pan, heat 1 tsp oil.
    2. Add cumin, fennel, cinnamon, cardamom powder and bay leaf. Saute till you get the aroma.
    3. Add the onions and then ginger garlic paste.
    4. Saute until onions soften.
    5. Add the chopped tomatoes, green chillies along with the rest of the seasoning including salt.
    6. Add about 1/4 cup of water and increase the heat.
    7. Cook until the tomatoes break down and become like a gravy.
    8. Reduce heat and discard the bay leaf and cinnamon stick.
    9. Add the chopped spinach on top. Let it wilt slightly.
    10. Add the chickpeas and close with lid.
    11. Cook until the spinach wilts completely.
    12. Stir to combine, add more seasoning if required.
    13. You can add more water and mash a few of the chickpeas to create a thick consistency.
    14. Serve hot.
