How to Make Chayote Squash Curry

  • Take a thick pan and heat the oil. Put all the ingredients for seasoning one by one, starting with dals and seeds after that.
  • When mustard seeds splutter, add curry leaves, onions and green chillies. Take care not to burn the seasoning.
  • Fry onions for few minutes. Add ginger- garlic paste. When onions turn brown add tomatoes cut into small pieces or tomato puree.
  • When tomotoes are fried well, add potato cubes. Fry for 1 or 2 min and put the lid on for some time.
  • When potatoes are cooked, add choyote squash and cover.
  • Add all powders and cook till done. Add coconut powder before switching off flame.
  • Sprinkle fresh coriander on the top for garnish.
  • Serve with rotis or hot rice.
