Ingredients

  • 3/4 cup - pre-cooked black beans (drained and mashed)
  • 1/2 cup - salsa
  • 1/2 cup - scallions chopped (green onion)
  • 2 tbsp - freshly chopped Cilantro
  • 4 oz - shredded cheese
  • 1 tbsp - chilli flakes
  • 1/2 - red bell pepper, diced
  • 1 - tomato, diced
  • 8 - tortillas

How to Make Cheese and Bean Quesadilla

  • Combine all the ingredients - except the tortillas.
  • Warm tortillas, evenly spread mixture onto the tortillas.
  • Top with remaining tortillas and cut into quarters before you serve.
