  • 4 oz - Cheddar cheese (grated)
  • 8 oz- Shredded chicken
  • 5 oz- Spinach
  • 2 tbsp - oil
  • 1 medium onion
  • 1 tbsp - flour
  • 6 cups - stock (chicken or veg)
  • 1/4 tbsp - cream (beat with a fork )
  • 1 tbsp - soya sauce
  • black pepper to taste
  • salt to taste

How to Make Cheese and Spinach Soup

  • Boil spinach in 3/4 cup water.
  • Shred the chicken.
  • Grind spinach, half of the shredded chicken and half of the cheese together.
  • Mix rest of the cheese and chicken in the stock and let it simmer in a frying pan.
  • Then add the ground items to the mixture.
  • Add soy sauce and half of the cream.
  • Fry thinly cut onions with the flour and add in the soup.
  • Serve hot with 1 tsp cream on each serving.
