  • 4 cups - Cream cheese, at room temperature
  • 2 cups - graham cracker crumbs
  • 1.25 cups - Sugar
  • 1/2 stick - butter, melted
  • 3 tbsp - Lemon juice
  • Grated rind of 1 Lemon
  • 1 tsp - vanilla extract
  • 4 - eggs
  • How to Make Cheese Cake:

    1. Preheat oven to 325 Fahrenheit.
    2. Grease a 9-inch spring foam pan.
    3. Place a 14-inch foil in the spring foam pan and press it up to the sides to seal it tightly.
    4. Mix the crumbs and the butter well.
    5. Press it into the bottom of the pan.
    6. Beat the cream cheese until smooth.
    7. Add the sugar, lemon rind, juice and vanilla extract and beat until blended.
    8. Beat in the eggs one at a time.
    9. Pour into the prepared pan.
    10. Set the pan in a larger baking tray and place in oven.
    11. Pour enough hot water in the outer tray, up to 1 inch.
    12. Bake until the top is golden brown (approximately 1 to 1.5 hours).
    13. Cool it in the spring foam pan and then slowly remove the bottom.
    14. Refrigerate for close to 1 to 2 hours.
    15. Dust with powdered sugar, cut it into slices and serve.
