Ingredients

  • 2 cups - graham cracker crumbs
  • 1/3 cup - sugar
  • 1/2 tsp - ground cinnamon
  • 1.5 cups - butter or margarine, melted
  • For the Filling:
  • 250 gms - packaged cream cheese, softened
  • 1.5 cups - sugar
  • 1 tsp - vanilla extract
  • 4 eggs, separated
  • fresh fruit

How to Make Cheesecake

  • In a small bowl combine the cracker crumbs, sugar and cinnamon. Stir in the butter.
  • Press into a greased 15 inch X 10 inch X 1 inch baking pan.
  • Bake at 350 degrees F for five minutes.
  • In a large mixing bowl beat the cream cheese, sugar and vanilla until smooth.
  • Add egg yolks and beat at a slow speed until combined.
  • In a small mixing bowl, beat egg whites until soft peaks form.
  • Fold beaten egg whites into cream cheese mixture.
  • Pour over the baked crust.
  • Bake for 28-39 minutes or until center is almost set.
  • Cool on a wire rack for 30 minutes.
  • Refrigerate overnight.
  • Garnish with fruit.
