Ingredients

  • 2 cups - graham cracker crumbs
  • 1/3 cup - Sugar
  • 1/2 tsp - ground Cinnamon
  • 1.5 cups - Butter or margarine, melted
  • For the Filling:
  • 250 gms - packaged Cream cheese, softened
  • 1.5 cups - Sugar
  • 1 tsp - vanilla extract
  • 4 eggs, separated
  • fresh fruit
  • How to Make Cheesecake:

    1. In a small bowl combine the cracker crumbs, sugar and cinnamon. Stir in the butter.
    2. Press into a greased 15 inch X 10 inch X 1 inch baking pan.
    3. Bake at 350 degrees F for five minutes.
    4. In a large mixing bowl beat the cream cheese, sugar and vanilla until smooth.
    5. Add egg yolks and beat at a slow speed until combined.
    6. In a small mixing bowl, beat egg whites until soft peaks form.
    7. Fold beaten egg whites into cream cheese mixture.
    8. Pour over the baked crust.
    9. Bake for 28-39 minutes or until center is almost set.
    10. Cool on a wire rack for 30 minutes.
    11. Refrigerate overnight.
    12. Garnish with fruit.
