Ingredients

  • 1lb - button mushrooms, sliced
  • 1 lb - Cottage cheese
  • To taste - black pepper
  • For batter:
  • 1 cup - white flour
  • 2 - eggs
  • 1 tbsp - Olive oil or melted oleo
  • 1/2 cup - Milk
  • 1/2 cup - water
  • whipped yogurt - 2 - tbsp

How to Make Cheesy Mushroom Crepes

  • Saute mushrooms in 2 tbsp of oleo for 2 to 3 minutes until they become tender.
  • Mix the cottage cheese and pepper.
  • Put all the batter ingredients in a food processor, and whizz until smooth.
  • Preheat the oven to 350 degrees F.
  • Use the crepe batter to make about 12 thin crepes.
  • Put a little of the mushroom mixture in the middle of each crepe, dividing it evenly among them.
  • Roll the crepes up and place them side by side in a shallow casserole.
  • Pour some whipped yogurt over them.
  • Cover tightly with a foil and bake for 20 to 30 minutes.
