Ingredients

  • 250 g - spaghetti
  • 1/4 cup - cheddar cheese
  • 2 - Capsicums (finely chopped)
  • 4 - Onions (thinly sliced)
  • 2 - Carrots (peeled and grated)
  • 1/2 cup - Cabbage (finely chopped)
  • 1 - Green chilli
  • 4 - Tomatoes (blanched and made into puree)
  • 1/4 tsp - ginger-garlic-green chillies paste
  • 1/4 tsp - Cumin seeds
  • 1/2 cup - Milk
  • 4 tsp - Lemon juice
  • oil
  • 1 tsp - Butter
  • salt to taste
  • Coriander leaves (finely chopped) for garnishing
  • How to Make Cheesy Spaghetti Delight:

    1. Dissolve 1/2 tsp of salt in 2.5 litres of water and bring it to boil.
    2. Add a few drops of cooking oil.
    3. Break the spaghetti into halves and gradually immerse them into the boiling water and continue to cook for 10-12 mins, stirring occasionally.
    4. Drain the cooked spaghetti.
    5. Rinse well in fresh cold water under a tap and keep aside.
    6. Heat oil and butter together in a pan.
    7. Add the cumin seeds and fry well.
    8. Add the sliced onions and cook until they turn transparent and slightly pink.
    9. Add carrots, green chilli and tomatoes. Saute.
    10. Then add capsicum, cabbage and ginger-garlic-chillies paste; mix and fry well.
    11. When the mixture is half cooked, add salt and milk.
    12. Cook until the milk evaporates.
    13. Add the grated cheese, mix well and fry for 5-8 mins.
    14. Add the boiled spaghetti and mix well.
    15. Mix lemon juice.
    16. Remove from the flame and garnish with chopped coriander leaves.
    17. Serve hot.
