Ingredients

  • 3- boiled eggs
  • 1 tbsp - oil
  • 6- Curry leaves
  • 3- Cloves
  • 1 -small Cinnamon stick (1 - inch size)
  • 1 -big onion, finely sliced
  • 1 tsp - chopped Coriander leaves (to garnish)
  • Spice powders:
  • 3/4 tsp - Red Chilli powder
  • 1 tsp - coriander powder
  • 1/4 tsp - cumin powder (jeera powder)
  • 1/4 tsp - pepper powder
  • 1/4 tsp - Turmeric powder
  • 1 big tomato, finely chopped
  • 1 tsp - level thick Ginger - Garlic paste
  • 1/2 tsp - salt (or to taste)
  • How to Make Chettinad style Muttai Varuval:

    1. Boil the eggs and slice into halves lengthwise.
    2. Heat oil in a kadai / pan, temper with curry leaves and whole spices (cloves and cinnamon).
    3. Add sliced onion and saute on a medium to low heat until golden brown.
    4. Add 5 spice powders listed and saute well.
    5. Add tomato, ginger - garlic paste and salt and fry till the whole masala is well blended.
    6. Add the eggs and mix lightly while still on the stove.
    7. Remove from heat and garnish with chopped coriander leaves.
    8. Serve with rotis / puris / pulao / ghee rice as a side dish.
