Ingredients

  • 3 - Chicken thigh, fillets
  • 1 - fresh pineapple, peeled
  • 1 - red pepper
  • 1 - green pepper
  • 1 tbsp - Mint leaves
  • 1 tbsp - Honey
  • 1 tbsp - oil
  • 1 tbsp - Lemon juice

How to Make Chicken and Pineapple Kebabs

  • Cut the chicken, halve the pineapple and the peppers into 3 cm pieces.
  • Thread the chicken, pineapple and pepper onto skewers.
  • Blend or process remaining pineapple, mint leaves, honey, oil and lemon juice, until smooth.
  • Brush some of the pineapple mixture over kebabs.
  • Barbeque until chicken is cooked through.
  • Serve pineapple mixture as a sauce.
