  • 2 tbsp. Coconut oil
  • 1 ¼ inch piece of fresh Ginger root, peeled and finely sliced
  • 2 Garlic cloves, crushed
  • 1 onion, chopped
  • 250 gms. Chicken breast strips
  • 2 cups quartered Mushrooms
  • 3 cups Broccoli florets
  • 2 cups chopped curly kale
  • 1-2 tbsp. soya sauce
  • 2 tbsp. sesame seeds

How to Make Chicken and Vegetable Stir Fry

  • Heat the oil in a wok or large skillet until hot, add the ginger, garlic and onion, and stir fry for 30 seconds.
  • Add the chicken and stir fry for another 2-3 minutes.
  • Add the vegetables, then sprinkle with the soya sauce.
  • Stir fry for 1-2 minutes, then cover and steam for another 4-5 minutes, until the vegetables are tender and the chicken is cooked through.
  • Serve sprinkled with the sesame seeds.
