  • For Jareesh:
  • 1 chicken, cut into four chunks
  • 2 ½ cups ground grains (Jareesh)
  • 1 cup Egyptian Rice
  • 1 minced Onion
  • 2 cups Yoghurt
  • 9 cups of water
  • 9 cups of Chicken stock
  • Salt to taste
  • For Sauce:
  • 1 ½ cup Tomato juice
  • 1 tbsp. Tomato paste
  • Salt to taste
  • ½ tsp. black pepper
  • ½ tsp. cumin
  • 1 tsp. dry, ground Lemon
  • 1 tsp. dry coriander
  • 2 large minced Onions
  • 50 gms. butter

How to Make Chicken Jareesh

  • Boil the chicken and remove skin and bones. Roast until red.
  • Stir fry onions in butter until golden, then toss washed wheat and rice, adding chicken stock.
  • Allow to simmer, stirring occasionally until it is well done.
  • Pour yoghurt and stir again.
  • Using a slice of butter in a pan, fry onion wings until golden.
  • Season with spices and ground lemon, toss for a minute, finally combining tomato juice, tomato sauce, salt and coriander.
  • To serve: Serve the wheat garnished with the sauce. The roasted chicken is presented in a side platter.
