  • 1 - chicken, cut into 16 pieces
  • 2 - onions, finely chopped
  • 20 gm - Parsley
  • 2 - Bay Leaves
  • 100 gm - almonds, peeled
  • 1 - Egg
  • 10 gm - garlic, chopped
  • 300 ml - Chicken stock
  • 100 ml - Olive oil
  • Salt and pepper, to taste
  • How to Make Chicken pepitoria:

    1. Make a stock using the bones of the chicken.
    2. Marinate the rest of the chicken pieces with salt and pepper.
    3. Dip the chicken pieces in flour. Coat well.
    4. Heat olive oil in a pan.
    5. Add chicken pieces and saute on low fire till golden brown.
    6. When done, place in a baking dish.
    7. In the same pan, add chopped onions and saute.
    8. Next, add garlic, bay leaves, parsley and chicken stock. Boil for 10 minutes.
    9. Make a paste of almonds and add to the pan.
    10. Pour over the chicken in the baking dish.
    11. Cover the dish with foil and place in a medium hot oven for 10 minutes.
    12. Garnish with slices of boiled egg and serve.
