Ingredients

  • 1 - chicken, cut into 16 pieces
  • 2 - onions, finely chopped
  • 20 gm - Parsley
  • 2 - Bay Leaves
  • 100 gm - almonds, peeled
  • 1 - Egg
  • 10 gm - garlic, chopped
  • 300 ml - Chicken stock
  • 100 ml - Olive oil
  • Salt and pepper, to taste

How to Make Chicken pepitoria

  • Make a stock using the bones of the chicken.
  • Marinate the rest of the chicken pieces with salt and pepper.
  • Dip the chicken pieces in flour. Coat well.
  • Heat olive oil in a pan.
  • Add chicken pieces and saute on low fire till golden brown.
  • When done, place in a baking dish.
  • In the same pan, add chopped onions and saute.
  • Next, add garlic, bay leaves, parsley and chicken stock. Boil for 10 minutes.
  • Make a paste of almonds and add to the pan.
  • Pour over the chicken in the baking dish.
  • Cover the dish with foil and place in a medium hot oven for 10 minutes.
  • Garnish with slices of boiled egg and serve.
