Ingredients

  • 1 packet - frozen puff pastry sheets
  • 8 - boneless Chicken breasts
  • 2 tsp - Thyme
  • 5 tbsp - Butter
  • 1 kg - onion, finely chopped
  • 1/4 lb - mushrooms, sliced
  • 2 tbsp - chopped Parsley
  • 18 oz package - Cream cheese
  • 2 tbsp - Dijon mustard
  • freshly ground pepper
  • salt to taste
  • How to Make Chicken Wellington:

    1. Thaw pastry for 20 minutes.
    2. Sprinkle chicken with seasonings. In medium skillet, brown chicken in 3 tbsp butter. Set aside.
    3. Add remaining butter to skillet.
    4. Add onions and mushrooms.
    5. Saute until tender and liquids have evaporated.
    6. Stir in parsley.
    7. On lightly floured surface, roll each sheet to 14-inch square.
    8. Cut into four 7-inch squares.
    9. Preheat oven to 375 degrees C.
    10. In small bowl combine softened cream cheese with mustard.
    11. Spread over cutlets.
    12. Spread each square with 2 tbsps mushroom mixture.
    13. Top with breast.
    14. Brush edges of pastry with water.
    15. Wrap pastry around chicken, pressing edges to seal.
    16. Place seam side down on ungreased baking sheets.
    17. Brush tops with egg wash.
    18. Bake about 20 minutes or until puffed or golden brown.
