  • 3 - large Chicken breasts
  • 425 g can - lychees
  • 1 - red pepper
  • 6 - Shallots
  • 3 tbsp - oil
  • 1/2 cup - water
  • 2 - Chicken stock cubes
  • 3 tbsp - Tomato sauce
  • 1 tsp - Sugar
  • 2 tsp - water extra
  • How to Make Chicken with Lychees:

    1. Remove chicken breast from bone, giving six individual pieces.
    2. Cut each chicken breast in half, lengthwise; cut each half into three pieces.
    3. Chop shallots into 5 cm (2 inch) lengths. Remove seeds from pepper, cut pepper into large dice.
    4. Coat chicken pieces in corn flour, shake off the excess flour.
    5. Heat oil in pan or wok. Add chicken pieces, cook until light golden brown.
    6. Add pepper and shallots. Cook, stirring for one minute.
    7. Add combined water, crumbled stock cubes, tomato sauce, sugar, salt and pepper. Add drained lychees, mix well.
    8. Cover and allow it to simmer until chicken is tender, about five minutes.
    9. Mix corn flour into a smooth paste with the water. Add to mixture, stir until boiling.
