Ingredients

  • 500 g - Spinach
  • 1/3 cup - Cream
  • 75 g - feta cheese (crumbled)
  • 4 - Chicken breast fillets
  • 1 tbsp - Olive oil
  • 2 tbsp - fresh Parsley (chopped)
  • For Sauce:
  • 1 cup - water
  • 1 cup - white Grape juice (250 ml)
  • 60 g - Butter
  • 2 cubes - Maggi Chicken stock
  • 2 tbsp - white flour
  • How to Make Chicken with Spinach and Feta:

    1. Place washed spinach in a pan. Cook, while stirring until it wilts, then drain.
    2. Combine spinach and cheese in a bowl, Cut a pocket inside each chicken fillet, fill with spinach mixture and secure with toothpicks.
    3. Heat oil in a pan, add chicken and cook until browned.
    4. Stir in sauce and simmer covered for 25 mins until well cooked.
    5. Stir in cream and parsley.
    6. For Sauce:
    7. Melt butter in pan and add flour.
    8. Stir over heat until it bubbles.
    9. Remove from heat.
    10. Gradually stir in water, white grape juice and Maggi chicken stock.
    11. Stir over heat until sauce boils and thickens.
