Ingredients

  • 500 g - spinach
  • 1/3 cup - cream
  • 75 g - feta cheese (crumbled)
  • 4 - chicken breast fillets
  • 1 tbsp - olive oil
  • 2 tbsp - fresh parsley (chopped)
  • For Sauce:
  • 1 cup - water
  • 1 cup - white grape juice (250 ml)
  • 60 g - butter
  • 2 cubes - Maggi chicken stock
  • 2 tbsp - white flour

How to Make Chicken with Spinach and Feta

  • Place washed spinach in a pan. Cook, while stirring until it wilts, then drain.
  • Combine spinach and cheese in a bowl, Cut a pocket inside each chicken fillet, fill with spinach mixture and secure with toothpicks.
  • Heat oil in a pan, add chicken and cook until browned.
  • Stir in sauce and simmer covered for 25 mins until well cooked.
  • Stir in cream and parsley.
  • For Sauce:
  • Melt butter in pan and add flour.
  • Stir over heat until it bubbles.
  • Remove from heat.
  • Gradually stir in water, white grape juice and Maggi chicken stock.
  • Stir over heat until sauce boils and thickens.
