Ingredients

  • Milk - 500 ml
  • Sugar - 1/2 cup
  • Green cardamom - 5
  • Bay leaves - 2
  • Ghee - 4 tbsp
  • Saffron - 1 pinch
  • Rose water - 6 drops
  • Basmati rice - 1/2 cup

How to Make Chilled Rice Kheer

  • Wash the rice, drain and fry in a tbsp of ghee for 2 mins.
  • In a deep pan, heat another tbsp of ghee and add the basmati rice, cardamoms, and bay leaves.
  • Fry for 5 minutes.
  • Add milk and keep stirring.
  • Bring to a boil and add sugar.
  • Keep stirring until the sugar dissolves in the milk.
  • Boil for 2 mins.
  • Add saffron and rose water.
  • Keep covered for 30 mins.
  • Cool and serve.
