Ingredients

  • 250 g - Refined flour or Maida
  • 50 g - desiccated Coconut
  • 300 g - powdered Sugar
  • 250 g - Butter
  • 4 - eggs, beaten
  • 1/2 tsp - salt
  • 1 tsp - vanilla essence
  • 2 level tsp - baking powder
  • How to Make Coconut Cake:

    1. Sift salt, flour and baking powder together.
    2. Cream the butter and sugar together well.
    3. Add the eggs, desiccated coconut and vanilla essence and mix well.
    4. Slowly add the sifted flour and fold in the mixture to form a smooth slightly thick consistency without lumps.
    5. Add a little milk if the mixture is too thick.
    6. Pour into a greased and paper lined baking dish or cake tin and bake in a moderate oven for about one hour or till the cake is done.
    7. Cool and remove from the tin.
