Ingredients

  • 1 cup - fresh grated Coconut
  • 3 - Green chillies
  • 1 - onion, chopped
  • 2 - Red Chillies
  • 1.5 cups - Rice
  • A bunch of Coriander leaves
  • 1 tsp Mustard
  • 1 tsp Cumin
  • Salt to taste
  • How to Make Coconut Chutney Rice:

    1. Cook rice and keep aside.
    2. Grind coconut, salt, a pinch of tamarind, 1 pod of garlic, coriander leaves and chillies to a smooth paste.
    3. In a kadai, saute curry leaves, mustard and cumin.
    4. Add onions and fry well.
    5. Add the ground paste to this and cook well for 5-8 minutes.
    6. Now, mix the rice.
    7. Garnish with cashew and coriander.
