  • 1/2 kg - lamb, cut into pieces
  • 200 ml - coconut milk powder
  • 1 large potato, peeled and cubed
  • 2 large onions, sliced thinly
  • 5 green chillies
  • 2 pcs cinnamon
  • 2 pcs cardamom
  • 1" piece ginger
  • 2 sprigs curry leaves
  • 2 tbsp - oil
  • 2 cloves
  • salt to taste

How to Make Coconut Coast`s Lamb Stew

  • Heat the oil in a saucepan.
  • Add the cinnamon, cardamom and cloves and in about 15 seconds, there should be a nice aroma.
  • Add the onions, ginger, curry leaves, chillies, potatoes and finally the lamb.
  • Fry for a while and add a little water and cook until tender (freeze at this point and finish later if you so choose).
  • Mix the coconut powder with a little water and pour into the saucepan.
  • Allow it to simmer for a few minutes.
  • To plate:
  • Serve with a garnish of fried curry leaves and juliennes (thin strips) of ginger.
  • Best with appams or hoppers.
