  • 1/2 kg - lamb, cut into pieces
  • 200 ml - Coconut Milk powder
  • 1 large potato, peeled and cubed
  • 2 large onions, sliced thinly
  • 5 Green chillies
  • 2 pcs Cinnamon
  • 2 pcs Cardamom
  • 1" piece Ginger
  • 2 sprigs Curry leaves
  • 2 tbsp - oil
  • 2 Cloves
  • salt to taste
  • How to Make Coconut Coast`s Lamb Stew:

    1. Heat the oil in a saucepan.
    2. Add the cinnamon, cardamom and cloves and in about 15 seconds, there should be a nice aroma.
    3. Add the onions, ginger, curry leaves, chillies, potatoes and finally the lamb.
    4. Fry for a while and add a little water and cook until tender (freeze at this point and finish later if you so choose).
    5. Mix the coconut powder with a little water and pour into the saucepan.
    6. Allow it to simmer for a few minutes.
    7. To plate:
    8. Serve with a garnish of fried curry leaves and juliennes (thin strips) of ginger.
    9. Best with appams or hoppers.
